Meet Our Chinese Resident Chef Simon Kin Man Kwok

Hailing from Hong Kong, where he was a chef for over 25 years before moving to Bangkok, Chef Simon brings with him more than 30 years of experience in authentic Cantonese dining.

Chef Simon learnt to cook at an early age, inspired by his father who owned a restaurant. Having been exposed to the culinary world since childhood, his career path was shaped right from the outset, and his fervent passion for cooking blossomed over the years into the mastery that it is today.

Some of Chef Simon’s recommendations include Baked Crab with Ginger & Spring Onions, a dish that is perfect for celebrating special occasions and to which he also adds puffed rice to enrich the flavor and texture; Sautéed Prawn with Special Orange Sauce; and one of his signatures Fried Sea Bass in Sweet and Sour Sauce which is a perfect showcase of his culinary skills.

But making its appearance in Bai Yun’s menu is also a selection of healthy choices such as Sand Gobi Boiled Rice with Chicken Cream Sauce. A flavourful main whose very unique taste comes from Chef Simon’s special technique of frying fish bones and then boiling them for 25-30 minutes to make a soup. He then seasons the boiled rice with dried scallops, ginger, celery and puffed rice. This is a nutritious menu, high in proteins and collagen to nourish your skin. Another wellness-inspired dish is Stir-Fried Lotus Roots with Mixed Chinese Herbs. The secret to the deliciousness of this dish is to stir fry vegetables just sufficiently enough to retain their nutrients, freshness and crunchiness.

Besides ensuring always the best taste and food quality before sending it out from the kitchen, Chef Simon never stops learning and whilst his cuisine remains authentic, he is always researching and developing new techniques to incorporate into his craft.
